What fun. You 'd never guess from the name that this is veggie salad with disks of carrot - hence the name - celery, green pepper and onion. All marinated in a tomato soup/oil/vinegar/sugar concoction, overnight.
Discovered this recipe while I was a consultant to one of the long time landmark New Orleans restaurants 20 years ago. It's still my all-time favorite catfish recipe and I have closely guarded the recipe till now. I hope others will enjoy it as much as I have.
This is a combination of several fresh fig appetizer recipes. With a nod to the famous 'bull shot' cocktail, this tasty bloody mary mix adds beef consomme for savory flavor. Drink it as is over ice or add vodka. Adjust the spices to your taste -- this version is spicy!
This recipe uses canned chicken, but if you want to use leftover chunked chicken or turkey, it 's even better. A dab of sweet relish is a nice taste surprise, and we love the apples, pecans, and raisins. The creamy salad dressing finishes it off nicely.
